- For the cookies
- 500 grams cookie Baking mix
- 200 grams butter
- 2 Tbsps instant Espresso powder
- 2 tsps cocoa powder
- 1 pinch salt
- 100 grams grated Chocolate shaving
- 100 grams chopped almonds
- For garnish
- 150 grams chocolate almonds
- 35 whole, blanched almonds
- 35 Mocha bean

Preparation steps
1.
For the cookies: Place the baking mix in a bowl. Cut the butter into pieces and add to the bowl along with the espresso powder, cocoa powder, salt and egg. Knead the dough with a hand mixer fitted with dough hooks until smooth. Knead in the grated chocolate and almonds.

Shape the dough into 10 gram balls and flatten slightly. Place on a parchment-lined baking sheet. Bake in a 180°C (approximately 350°F) oven for 10-12 minutes. Remove and allow to cool.

For garnish: Cut the chocolate into pieces and place in a bowl. Set over a pot of simmering water until melted. Place a dab on top of each cookie. Top with an almond or mocha bean. Allow to set before serving.
