- For the dough
- 80 grams candied Cherries
- 100 grams cold butter
- 80 grams cane sugar
- 1 pinch salt
- 1 egg
- 225 grams Pastry flour
- 1 tsp Baking powder
- ¼ tsp cinnamon and Ground clove
- ¼ tsp ground ginger
- 80 grams chopped almonds

Preparation steps

For the dough, chop the candied cherries. Knead the cherries, butter, sugar, salt, egg, flour, baking powder, spices and almonds. Roll in to a 4 cm roll, wrap in plastic and chill for about 1 hour.

Cut the roll into 5 mm (approximately 1/4 inch) thick slices. Place the cookies on a lined baking sheet.
For the decoration, whisk the egg yolk and spread on the cookies. Halve the candied cherries. Decorate each cookie with a candied cherry half and planed almonds. Bake for about 12 minutes at 180°C (approximately 350°F). Remove from the oven, let cool and serve.
