For the dough
250 grams butter
150 grams sugar
3 eggs
300 grams Pastry flour
50 grams ground almonds (peeled)
1 teaspoon baking soda
1 pinch salt
40 grams Candied lemon
60 grams slivered almonds
For decoration
100 grams powdered sugar
1 teaspoon lemon juice
sugar (to sprinkle)
Candied lemon (in fine strips)

Preparation steps

For the dough, beat the butter and sugar until creamy. Beat in the eggs. Mix the flour, almonds, baking soda and salt. Mix the flour mixture into the butter mixutre. Chop the candied lemon. Fold the lemon and almonds into the dough.

Preheat the oven to 180°C (approximately 350°F).

Use a teaspoon to heap portions of the dough onto a lined baking sheet. Bake for 10-15 minutes, until golden brown. Remove from the oven and let cool on a wire rack.

For the decoration, mix the powdered sugar and lemon juice into a thick icing. Spread the icing on the cookies. Sprinkle with sugar. Let dry. Decorate with candied lemon peel and serve.
