1 small Radicchio
8 ripe Figs
200 grams Bacon (sliced)
Fat (for grilling)
4 Tbsps olive oil
salt

2 Tbsps Blossom honey
1 Tbsp lemon juice

Preparation steps

1.

Rinse the endive, and cut in half. Remove the stalk and thinly slice.

Separate the leaves of the radicchio. Rinse, dry, and thinly slice.

Rinse and halve the figs. Cut the bacon into strips, and cook in a dry pan until crispy. Remove from the heat and drain on paper towels.

Preheat the broiler.

Place the figs cut side up in a greased aluminum pan, and drizzle with 1-2 tablespoons of olive oil. Season with salt and pepper and cook for 5 minutes. Drizzle with 1 tablespoon of honey, turning once. Mix the remaining honey, lemon juice, and remaining olive oil. Mix the endive and radicchio. Transfer to plates, top with the figs, and sprinkle with bacon strips. Drizzle with the honey mixture and season to taste with salt and pepper.
