1 Red chili pepper
1 onion
3 garlic cloves
15 grams ginger
Vegetable fat (for frying)
8 hardboiled eggs
2 Tbsps soybean oil
1 tsp Sambal oelek
1 tsp Curry powder
salt
sugar

Preparation steps

Heat vegetable fat in a deep fryer to 170°C (approximately 350°F).

Rinse chile pepper, cut in half lengthwise, remove seeds and ribs and dice finely. Peel onion, garlic and ginger and chop everything finely. Peel eggs and place into the deep fryer in portions.

Fry eggs in the deep fryer for about 5 minutes until golden, remove and drain on paper towel. Fry remaining eggs in the same manner.

Heat soy oil in a hot wok and saute onions, garlic, and ginger cubes for 1-2 minutes.

Add chile pepper and sambal oelek and stir.

Add curry powder to the wok and add approximately 1 teaspoon each of salt and sugar. Let simmer for a few minutes and season to taste.

Break eggs into the sauce, mix and serve hot. Serve jasmine rice if desired.
