1 generous pinch cayenne pepper
3 Tbsps lemon juice
100 milliliters Salad oil
2 Tbsps scallions
2 Tbsps Diced tomatoes (seedless)

Preparation steps

1.

Peel the eggs, remove the yolk, and finely grate into a bowl. Mix the yolks with the mustard and lemon juice. Season to taste with salt, pepper, and cayenne pepper.

Finely chop the egg whites.

Gradually incorporate the oil, whisking constantly, until the sauce is thick. Mix in the chopped chives, egg whites, and diced tomatoes. Toss until thoroughly combined. 

4.

You can prepare a variation of this dressing by replacing the chives and tomatoes with 1 tablespoon of small capers and 1 tablespoon of finely diced pickles.
