Preparation steps

Rinse leeks thoroughly and trim ends. Blanch leeks in salted boiling water, 3-4 minutes. Rinse and drain. Place leeks on an oiled grill and cook 5-6 minutes.

To make dressing: Cook eggs in boiling water until hard-boiled, about 10 minutes. Rinse with cold water and peel. Whisk lemon juice with vinegar, sugar, salt and pepper to taste, and oil. Crumble eggs into dressing.

3.

Divide leeks among plates and serve drizzled with dressing.
