Preparation steps

1.

Rinse the rosehips, cut stem and flowers, halve and remove seeds, making sure to use gloves.

Rinse lemons, wipe dry and squeeze juice. Simmer rosehip, lemon juice and 100 mL (approximately 1/2 cup) until the rosehips are soft. Add the honey (or sugar) and, while stirring slightly, let cool for about 15 minutes. Press the pulp through a sieve, pour into jars, let stand a few minutes and tightly close. Refrigerate until ready to use. Tip: To preserve the jam for longer, you will need to process the jars according to manufacturer's instructions, or visit http://nchfp.uga.edu/.
