150 grams Rose hip
250 grams Pear
250 grams jam sugar (1:1 ratio)
4 cloves
1 organic lemon (zested and juiced)

Preparation steps

Rinse and trim the rose hip. Halve, scrape out the seeds, and soak overnight in 150 ml (approximately 5 ounces) of water.

Cook in the soaking water, mash, and pass through a fine strainer.

Peel the pears, remove the core, and dice into cubes. Mix with the rose hips, the lemon zest, and lemon juice. Weigh, and add the same amount of jam sugar. Transfer to a pot, add the cloves and bring to a boil. Reduce the heat, and simmer for 10 minutes, stirring constantly until the pear is soft.

4.

Fill immediately into prepared jars. Seal tightly, and turn upside down for 15 minutes. Turn right side up and cool completely.
