2 Tbsps olive oil
1 Tbsp balsamic vinegar

Preparation steps

1.

Rinse and halve the tomatoes. Place in a bowl. Mix with olive oil and balsamic vinegar. Season with salt and pepper.

Place the tomatoes, cut side up on a lined baking tray and bake in a preheated oven at 170°C (approximately 340°F) for about 50 minutes. Roast until they are wrinkled but slightly moist. Allow to cool on the baking sheet. Remove and transfer to a container and refrigerate. The tomatoes keep about 1 week.
