Preparation steps

Rinse the tomatoes, pat dry, and slice lengthwise. Place on a baking sheet lined with parchment paper. Season with salt, pepper, and lemon thyme. Dry in a 80-100°C (approximately 175-215°F) oven for 6 hours, leaving the oven door propped oven.

Turn the tomatoes 1-2 times during the process. Cool the finished tomatoes, seal, and place in an airtight container or in oil.
