- 2 kilograms small Vine tomato
- 6 sprigs thyme
- 2 sprigs rosemary
- 200 milliliters olive oil
- 100 milliliters Canola oil
Preparation steps

Rinse tomatoes, cut in half and remove seeds. Preheat oven to 80°C (approximately 175°F). Place tomatoes on a baking sheet, cut side up, in the oven. Allow to dry for 8 to 10 hours in the oven, until no more juice leaks out when tomatoes are pressed. Wedge a wooden spoon in the oven door to create a wide gap.

Rinse thyme and rosemary and pat dry. Strip rosemary leaves from branches. Divide herbs between 2 jars and add tomatoes. Mix olive oil and canola oil and fill jars with oil mixture until tomatoes are completely covered. Infuse for at least 3 days before serving.
