3 garlic cloves
4 sprigs thyme
olive oil (for brushing)

Preparation steps

1.

Preheat the oven to 110°C (approximately 225°F). Brush a baking sheet with olive oil.

2.

Rinse tomatoes, remove stem and seeds (shortens drying time), place tomatoes on the baking sheet. Cut garlic cloves in half and mix with thyme, spread garlic and thyme over tomatoes.

3.

Season tomatoes with salt and place baking sheet in preheated oven. Allow to dry with a wooden spoon propping open the oven door for about 6-8 hours. Turn tomatoes approximately every 30 minutes. The tomatoes should pliable at the end of the cooking time, but not too tough or moist.
