400 grams floury potatoes
2 eggs
1 tsp sesame oil
1 chili pepper (finely chopped)
soy sauce
20 Wonton wrapper (in an asian grocery)

Preparation steps

Cook the potatoes in their jackets in boiling salted water for about 30 minutes. Then drain, peel, squeeze through a ricer and let evaporate slightly. Separate the eggs. Combine potatoes with egg yolks, sesame oil and chili pepper and season with soy sauce. Place wonton sheet (if sheets are not round, cut out with a circle cookie cutter about 10 cm, approximately 4 inch, diameter) onto a work surface and onto each put a tablespoon of potato mixture.

Brush edges of the sheets with egg whites and fold into a semicircle. Press around the edges with a fork and fry in hot oil until golden brown for about 2 minutes. Drain on paper towel and serve with dips at will.
