Deep Fried Cauliflower Nuggets

These cauliflower nuggets are the lighter alternative to the classic finger food and are also vegetarian. The cauliflower is also rich in potassium and thus ensures a balanced fluid balance in the body.
You can vary the vegetables by using carrots, celery, kohlrabi, or parsnips. You can either eat the nuggets alone or prepare a dip, such as our yogurt dip!

- 8 ozs Cauliflower
- 16 ozs waxy potatoes
- salt
- 1 garlic clove
- 1 scallion
- 1 cup Chickpea flour
- 1 tsp Curry powder (Indian)
- 1 tsp Garam Masala
- 1 splash Lime juice
- vegetable oil (for frying)
Preparation steps
Rinse the cauliflower and coarsely chop the florets and stem. Peel the potatoes, chop and together with the cauliflower, cook in salted water for about 15-20 minutes or until soft.
Meanwhile, peel the garlic and finely chop. Rinse the scallion, trim, halve lengthwise and cut into small rings.
Drain the cooked vegetables and press through a ricer onto a work surface. Add the scallion, garlic, chickpea flour, curry and garam masala to the vegetables. Season with salt and lime juice. Knead well and shape into about 20 small nuggets.
Heat the vegetable oil in a deep fryer to 350°F. Fry the vegetable nuggets until golden brown. Drain on paper towels and serve immediately.
If desired, serve with a yogurt dip.
