Ingredients

For the prawns
400 grams King prawn
1 pc ginger
1 garlic clove
3 Tbsps cornstarch
2 eggs
½ Tbsp Pastry flour
1 pinch Baking powder
salt
200 grams White bread crumbs
For the dip
4 Tbsps soy sauce
2 Tbsps sherry
1 Tbsp Hoisin sauce
For the frying
vegetable oil (for frying)

Preparation steps

For the prawns, peel ginger and garlic and finely chop. Whisk eggs in a bowl and season with salt. Add ginger and garlic. Stir in cornstarch, flour and baking powder and then let batter rest for about 15 minutes. Rinse prawn, devein and then dip into the batter and cover with breadcrumbs.

For the dip, mix all ingredients together in a bowl and season to taste.

For the frying, heat oil in a pot and fry prawns in portions until golden brown. Serve deep fried prawns with dip.
