For the flowers
20 Giant hawks
1 egg
125 grams Pastry flour
1 pinch salt
freshly ground peppers
150 milliliters milk
vegetable oil (for frying)
For the dip
200 grams Quark
2 Tbsps Whipped cream
1 Tbsp scallions

Preparation steps

For the flowers: Rinse the flowers well and drain. Whisk the egg and stir with the flour, milk, salt and pepper until smooth. The dough should be viscous but not too firm. Dip the goutweed flowers in the batter and fry in hot oil (at 170°C, approximately 340°F) for about 2 minutes until golden brown. Then drain on a paper towel.

For the dip: Stir together the quark with the cream until smooth. Mix in some chives and season with salt and pepper.
