125 milliliters Whipped cream
20 grams Pastry flour

Preparation steps

1.

Cut mozzarella into 8 slices. Remove crust from white bread slices. Place 2 slices mozzarella onto each piece of bread (4 slices). Season with salt, pepper and thyme. Top with remaining slices of bread. Brush edges with egg white and press firmly together.

Beat eggs with cream and season with salt and pepper. Dip bread in flour and then into egg and cream mixture. Heat olive oil in pan and fry bread until golden brown on both sides. Serve immediately.
