200 grams Pastry flour
½ tsp salt
1 tsp dried thyme
250 milliliters dry white wine
2 eggs
600 grams Halloumi cheese
3 Tbsps Pastry flour (for rolling)
vegetable oil (for frying)
For the garnish

Preparation steps

1.

For the cheese, sift flour into a bowl and mix with salt, thyme and wine until smooth. Add eggs and mix well with a whisk. The batter should be a thick liquid that flows from the whisk.

Cut cheese into slices, roll in flour, in portions, pull through the batter and fry for 2-3 in a pot of preheated 170°C (approximately 350°F) oil until golden brown.

Drain on paper towel. Serve garnished with basil and caraway seeds and serve if desired with Focaccia bread and olives.
