Dandelion is very rich in vitamin C and beta-carotene. Its bitter substances provide a slightly tart taste. The herb drains and stimulates the production of bile and liver. Sprouts are little powerhouses, provide lots of nutrients and can be grown quite easily on the windowsill.
If you can't get dandelion, you can use arugula instead, which is also very flavorful. Instead of strawberries, fruity mango cubes also go well with the salad. However, make sure that the fruit is properly ripe, as this makes a big difference in taste compared to unripe specimens.

- 6 ozs dandelion leaves (4 handfuls)
- 9 ozs Strawberries
- ¾ oz Beet sprouts (1 handful)
- 2 Tbsps Pine nuts
- 2 Tbsps olive oil
- 3 Tbsps Vegetable broth
- 2 Tbsps balsamic vinegar
- 2 tsps Agave syrup
- salt
- peppers
Preparation steps
Wash dandelion leaves, shake dry and cut in half crosswise if necessary. Clean, wash and quarter strawberries. Wash beet sprouts thoroughly and shake dry.
Roast pine nuts in a pan without fat over medium heat.
Whisk together oil, broth, vinegar, agave syrup, salt and pepper to make dressing.
Mix the dandelions and strawberries with the dressing and garnish with sprouts and pine nuts.
