- For the dressing
- ½ cup Soy yogurt
- 1 Tbsp hot water
- 1 Tbsp lemon juice
- 2 tsps Harissa
- For the salad
- 11 ozs light Halloumi cheese (cut into slices)
- 1 Tbsp olive oil
- 2 cups cherry Tomatoes (halved)
- 4 Tbsps Basil
- salt
- freshly ground Black pepper

Preparation steps
1.
For the dressing: Whisk together the soy milk yoghurt, hot water, lemon juice, harissa paste, and seasoning in a small bowl. Cover and chill until needed.
2.
For the salad: Preheat the grill to hot. Lightly brush the Halloumi with oil and season with salt and pepper. Place on a grilling tray and grill for 2 - 3 minutes on both sides, until lightly coloured.
3.
Remove from the grill and toss with the cherry tomatoes, basil leaves, and a little seasoning.
4.
Divide between bowls and spoon over the prepared dressing before serving.
