2 Tbsps Double cream
1 tsp mild Curry powder
1 tsp lemon juice
salt
1 pinch cayenne pepper
1 scallion
1 Tbsp acid Whipped cream
100 grams chicken breast or Turkey cutlets
1 tsp butter
1 pinch ground ginger
100 grams ripe Mangoes
Lettuce
2 Whole wheat buns

Preparation steps

1.

Combine cream, curry powder and lemon juice. Season with salt and pepper. Rinse scallions and cut white and light green sections into thin rings. Stir into cream mixture and add sour cream. Season with salt and pepper.

Cut turkey in half crosswise. Heat butter in a nonstick pan. Sear turkey on each side for 2-3 minutes. Season with salt and ginger.

Peel mango, remove pit and dice flesh. Rinse lettuce leaves and shake dry. Cut rolls in half lengthwise and toast in until golden brown.

4.

Spread curry cream onto the lower halves of the buns. Add lettuce and turkey. Top with mango slices and top of bun. Serve immediately.
