1 ½ cups Basmati rice
1 shallot (finely chopped)
4 Tbsps sesame oil
1 red pepper (diced)
1.333 cups frozen peas
1 tsp Curry
1 Peach (sliced)
2 Tbsps Lime juice
cayenne pepper
Thai basil (finely chopped)

Preparation steps

1.
Cook the rice according to the directions on the packet. Leave to cool.
2.
Fry the shallot in 1 tbsp oil. Add the pepper, peas and curry then remove from the heat.
3.
Mix everything together with the rice and add the peach. Stir in the remaining oil and the lime juice and season with salt and cayenne pepper. Steep for 10 minutes and serve garnished with basil.
