Cucumber Protein Drink
This drink is rich in protein and potassium, thanks to the cucumber.
If you don't have buttermilk, you can subsitute 5 oz. of mik with two tablespoons of low-fat plain yogurt.
Cut 4 thin slices from the cucumber and set aside. Peel what remains of the cucumber and halve lengthwise. Coarsely chop the cucumber and place in a blender.
Add the herbs, buttermilk, and the protein powder to the blender and puree completely. Season to taste with salt and pepper. Pour the cucumber mixture into a tall glass and garnish with the dill. If you'd like, place the cucumber slices on a wooden skewer. Garnish the drink with the cucumber skewer and serve.
