Preparation steps

1.

Rinse cucumber and slice into thin slices. Peel grapefruit, remove white skin and cut into segments.

Reserve as much grapefruit juice from cutting as possible. Mix 4 tablespoons sunflower oil,in a bowl with 2-3 tablespoons balsamic vinegar, salt, ½ teaspoon sugar, grapefruit juice and pepper. Arrange cucumber slices and grapefruit segments in glasses.

3.

Cover each glass with 1-2 tablespoons of cottage cheese and sprinkle with chives. Serve drizzled with 1-2 tablespoons of salad dressing.
