80 grams Bread flour

Preparation steps

1.

Cook 8 eggs for about 5 minutes in boiling water, shock in cold water, drain and then peel carefully. Coat with pastry flour. Whisk the remaining eggs and season with salt, pepper and turmeric.

2.

Dip the peeled eggs in whisked egg mixture and coat with bread flour. Fry in the hot oil (170°C/approximately 340°F) until golden brown, about 2-3 minutes. Drain on paper towels and serve with soy chili sauce to taste.
