1 Tbsp vegetable oil
1 Tbsp butter
3 Tbsps dark balsamic vinegar
4 Tbsps olive oil
2 Tbsps Orange juice
1 tsp honey

40 grams Parmesan (block)

Preparation steps

1.

Rinse the watercress and shake or spin dry. Peel the onions and cut into thin rings. Combine the vegetable oil with the butter in a pan and saute the onions until brown.

2.

Whisk together the balsamic with the olive oil, orange juice and honey and season with salt and pepper.

3.

Spread the dressing on four small dishes, arrange the watercress on each and top with the onions. Garnish with freshly shaved parmesan and serve.
