- 1 cup frozen Broad bean
- salt (to taste)
- 1 cup sun-dried tomatoes (in oil) drained
- 2 cups cherry Tomatoes (washed and halved)
- freshly ground Black pepper (to taste)
- 1 bunch Watercress (washed; shaken dry and trimmed)
- For Dressing
- 6 Tbsps olive oil
- ¼ cup white balsamic vinegar
- 1 clove garlic cloves (peeled and pressed)
- freshly ground Black pepper (to taste)
- ½ cup Parmesan freshly shaved (to garnish)
- In Addition
- crusty Bread (to serve)

Preparation steps

Cook beans in salted boiling water for 3 to 4 minutes. Drain and rinse with cold running water to refresh. Remove the tough outer skins from the beans.

Cut sun-dried tomatoes into thin strips. Place beans, sun-dried tomatoes, and cherry tomatoes in a large bowl. Season with salt and pepper. Add watercress and toss.
