- 4 Salmon cutlets (with skin, 250 grams)
- ½ bunch Watercress
- 200 grams lamb's lettuce
- For the vinaigrette
- 2 Oranges
- 3 Limes
- 1 tsp Orange zest
- 1 tsp Dill (dried)
- 1 tsp ginger (grated)
- salt

For the marinade:

Squeeze the oranges and limes, combine juices with dill, ginger and orange zest and season with salt and pepper.

For salmon:

Place the salmon steaks in a roasting bag, pour 2/3 of the vinaigrette over salmon, seal bag and marinate about 1 hour in the refrigerator.

Place the roasting bag in a preheated oven at 180°C.

Cook salmon steaks in juice for about 20 minutes.

Rinse the lettuce and cress, trim and spin dry. Mix the remaining vinaigrette with the oil and season. Arrange the salad on plates, drizzle with vinaigrette. wash the limes and cut into slices the salad marinate.

Take the salmon steaks from the oven and arrange on the salad and serve immediately.
