Ingredients

For the crêpes
100 grams Pastry flour
1 pinch salt
1 Tbsp Vanilla sugar
100 milliliters milk
2 eggs
100 milliliters mineral water
2 Tbsps melted butter
butter (for cooking)
For serving
400 grams Strawberries
200 grams Blackberry
2 Tbsps powdered sugar
1 Tbsp lemon juice
2 Peaches

Preparation steps

Mix the flour with the salt, vanilla sugar, and milk until smooth. Stir in the eggs, mineral water, and the melted butter so that the dough is supple and not too thick. If required add a little milk. Let rest about 30 minutes.

Rinse and sort the berries and trim as necessary. Mix half of the strawberries with the powdered sugar and lemon juice and puree, then press through a sieve. Chop the remaining strawberries into small pieces. Blanch the peaches briefly, drain, remove the skin, cut in half, remove the pits and cut into pieces. Distribute with the sliced strawberries and blackberries onto plates. Drizzle the strawberry sauce over the top.

Cook 4 golden brown pancakes in a nonstick pan with a little bit of hot butter. Fold the crêpes and serve with the berries.
