1 cup all-purpose flour
½ tsp baking soda
3 eggs
cup Buttermilk
2 Tbsps sunflower oil
1 Apple (peeled and sliced)

Preparation steps

Sieve the flour, baking soda (baking powder) into a bowl. Mix together the eggs and buttermilk in a jug with 3 tbsp cold water.

Pour the wet ingredients into the dry and whisk everything together to make a smooth batter.

Heat the oil in a large non stick pan and add the apple. Fry gently for several minutes until softened. Turn over the apples.
4.
Pour in the pancake batter and cook for about 3 minutes until the underside is firm, then use a large non-stick spatula to turn over the pancake.
5.
Cook for 3 more minutes, or until the pancake is cooked through thoroughly. Cut into wedges to serve. Garnish with mint.
