200 grams Pastry flour
1 tsp Baker's chocolate (heaping)
2 eggs
200 milliliters milk (1.5% fat)
100 milliliters mineral water
4 Yogurt (0.1% fat) (low fat)
1 pinch salt
clarified butter (for frying)
For the bananas
150 grams dark Chocolate
2 Banana

Preparation steps

For the crepes: Combine the flour and baking chocolate in a bowl and stir in a little milk until smooth. Then add the eggs, yogurt, salt, mineral water and the remaining milk and stir until smooth. Let the batter rest for at least 20 minutes, stir again. Heat a little butter in a pan, ladle some batter into the hot pan, gently tilt the pan back and form to coat with a thin, even layer of batter. Cook on medium heat, flip over, cook the other side and transfer to a plate. Keep warm in a preheated oven at 100°C (approximately 200°F). Repeat with the remaining batter.

For the bananas: Melt the chocolate in a bowl over a hot water bath. Peel the banana and cut it into slices. Fry the banana in 1 tablespoon clarified butter.

Fold the crepes loosely, place on plate and top with the fried bananas. Drizzle with melted chocolate and serve immediately.
