- 4 Tbsps unsalted butter
- 2 medium onions (finely chopped)
- 2 ribs Celery (finely chopped)
- 3 cloves garlic cloves (minced)
- 6 Maine potatoes (peeled and cubed)
- 2 sprigs fresh Dill (finely chopped plus extra for garnish)
- 4 cups chicken stock
- 1 ½ cups heavy cream
- salt (to taste)
- freshly ground Black pepper (to taste)
- ½ cup smoked Salmon (cut into bite size pieces)

Preparation steps
1.
In a stock pot over medium heat, melt butter; add onions and celery and saute until soft and translucent, about 5 to 8 minutes. Add garlic and saute until fragrant, about 45 seconds.
2.
Add potatoes and dill; cover with chicken stock and simmer until potatoes are fork tender or about 20 minutes. Puree with hand blender until smooth. Add cream; season with salt and pepper, stirring well to incorporate. Bring to a simmer to warm through.
3.
Ladle soup evenly between bowls. Garnish with smoked salmon and fresh dill sprigs. Serve hot.
