1 tsp Canola oil
11 ozs Peas (fresh or frozen and thawed)
2 ¼ ozs Vegetable broth
1 pinch salt
1 pinch peppers
1 pinch Nutmeg
½ carrot
1 ½ ozs Mozzarella
2 Tbsps cream cheese

1 Immersion blender, 1 Serving ring or Cookie cutter ring

Preparation steps

Sort lamb's lettuce, wash, spin dry, pluck leaves. Heat oil in a pot. Steam peas in it over medium heat for 2 minutes. Add broth, season with a little salt, pepper and 1 pinch of freshly grated nutmeg. Bring to a boil and cook over low heat for 2-3 minutes.

Meanwhile, clean, peel and wash carrot and cut into thin finger-length slices. Cut mozzarella into small cubes and carefully form into balls.

Add cream cheese and half of the lamb's lettuce to the peas. Blend everything until creamy, season with salt and pepper and arrange creamy pea puree on plates with the help of a serving ring.

4.

Spread remaining lamb's lettuce as hair on top half, place mozzarella as eyes. Add carrot strips as smiling mouth and serve.
