- 1 kilogram starchy potatoes
- salt
- 2 garlic cloves
- 4 Tbsps olive oil
- 50 grams Crème fraiche
- freshly grated Nutmeg

Preparation steps
1.
Peel the garlic and potatoes. Cook both in boiling salted water for 25 minutes. Drain the potatoes and garlic, dry slightly, and pass through a ricer.
2.
Warm the olive oil, but don't bring to a boil. Mix the potatoes with the warm olive oil and the creme fraiche. The potatoes should still be light and airy. Season to taste with salt and nutmeg, and serve.
