½ tsp grated lemon zest
1 Tbsp finely chopped Fresh herbs (cilantro; basil; parsley; chives; etc.)
1 Tbsp drained Caper
4 slices white Bread
1 english Cucumber (rinsed; trimmed and sliced thinly lengthwise)
1 ripe Tomato (rinsed; trimmed and sliced)
Lettuce (rinsed and shaken dry)

Preparation steps

1.
In a small bowl, combine softened cream cheese, grated lemon zest, chopped fresh herbs and capers. Spread a thin layer on one side of each slice of bread. Arrange a layer of cucumber, tomato, and lettuce on two of the bread slices. Top with the remaining bread slices. Trim the crusts and cut each sandwich into 4 triangles. Serve.
