1 egg
cup sunflower oil
½ cup milk
½ tsp vanilla extract
¼ cup Cottage cheese
½ cup dried Cranberry
1 small, unwaxed Orange (finely grated zest)

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in 6 muffin tins.
2.
Sift the flour, sugar and baking powder into a mixing bowl.
3.
Beat together the egg, oil, milk, vanilla and cottage cheese.
4.
Pour into the flour mixture and mix until just combined. Stir in the cranberries and orange zest.
5.
Spoon into the paper cases and bake for 15-20 minutes until firm and risen. Cool in the tins for a few minutes, then place on a wire rack to cool completely.
