- 1 yellow Bell pepper
- ½ bunch scallions
- 4 Tbsps parsley (finely chopped)
- salt
- freshly ground peppers

Preparation steps
1.
Blanch tomatoes for a few seconds, peel, remove seeds and cut into small cubes.
2.
Rinse bell pepper, trim, cut in half, remove seeds, remove all white ribs and cut into small cubes.
3.
Rinse, trim and chop scallions.
4.
Mix tomatoes, bell pepper, scallions and parsley in a bowl and season with salt and pepper.
