300 grams Tomatoes
3 scallions
60 milliliters olive oil
1 lemon (juiced)

Preparation steps

1.

Soak the couscous for 20 minutes in cold water. Rinse, dry, and finely dice the herbs. Rinse and halve the tomatoes. Remove the seeds and finely dice. Rinse, trim, and thinly slice the scallions.

2.

Drain the couscous in a colander. Mix the couscous with the herbs, tomatoes, scallions, olive oil, and lemon juice. Season to taste with salt and pepper, and serve.
