- 1 onion
- 1 garlic clove
- 2 Tbsps olive oil
- 200 milliliters dry white wine
- 1 generous pinch ground saffron
- 1 bay leaf
- 1 Star anise
- 400 milliliters fish stock
- 40 grams dried Tomatoes
- salt
- cayenne pepper
- 500 grams clam
- 4 Cod about 120 grams each (approximately 4 ounces)
- 1 Tbsp scallions

Preparation steps

Peel and finely chop the onion and garlic. Saute in 1 tablespoon of hot oil until translucent and deglaze with the wine. Add the saffron, bay leaf and star anise. Simmer about 10 minutes. Pour through a sieve into a large pot and bring to a boil with the tomatoes. Season with salt and cayenne pepper.

Wash the clams and discard any that are not slightly open. Rinse the cod, pat dry and season with salt and pepper. Cook the cod in hot oil in a nonstick pan for 2-3 minutes until golden brown. Flip, then add the broth. Add the clams, cover and cook about 6 minutes on low heat. Do not boil.

Serve cod and clams with the broth in bowls, garnished with chives.
