- 5 ozs dried Spaghetti
- 3 Tbsps olive oil
- 1 clove garlic cloves (crushed)
- 1 pinch Chili flakes (optional)
- 1 ⅔ cups clam (eg. vongole or palourdes), scrubbed
- ⅜ cup white wine (or vermouth)
- 2 Tbsps Chives (chopped)

Preparation steps
1.
Bring a pan of salted water to the boil, then add the pasta and cook until just al dente or a minute less than the packet instructions.
2.
Meanwhile, heat the oil in a large deep pan, then add the garlic and fry gently. Do not allow to colour. Add the chilli.
3.
Add the clams, discarding those that remain open, and pour over the alcohol and cover. Cook for 2-3 minutes or until all the clams have opened.
4.
Drain the pasta, not too thoroughly, then add to the pan with the clams in. Cover with a lid and shake gently to coat the pasta thoroughly and amalgamate. Cook gently for one minute.
5.
Check the pasta is cooked and discard any unopened clams. Sprinkle over the chives and spoon into warmed bowls to serve.
