- 16 raw, medium shrimp (peeled, without heads, each about 30 grams)
- salt
- freshly ground peppers
- 200 grams Coconut flakes
- 4 egg whites
- 500 milliliters vegetable oil (for frying)
- Lime wedge (for garnish)

Preparation steps
1.
Shrimp, remove tail fins, carve along back with a sharp knife, devein and season with salt and pepper.

Place coconut flakes in a shallow bowl. Whisk egg whites in a bowl. Heat vegetable oil in a wok to 180°C (approximately 350°F).
3.
Stick shrimp with a fork, dip into egg white, drain a little, then cover in coconut flakes and fry in the hot oil for 2 minutes until golden brown. Drain briefly on paper towels. Serve immediately with lime wedges.
