2 Tbsps butter
150 milliliters dry white wine
800 milliliters Beef broth
1 bay leaf
100 grams Mountain cheese

Preparation steps

Peel onions, halve and cut into thin half-rings. Peel garlic and chop finely. Rinse thyme, shake dry and pluck off leaves. Melt butter in a saucepan, cook onions and garlic until lightly browned. Add white wine and broth. Add bay leaf and thyme leaves. Simmer, uncovered, for 15-20 minutes on low heat. Meanwhile, grate cheese. Season soup with salt and pepper and remove bay leaf. Sprinkle bread slices with cheese and cumin seeds.

Toast cheese slices under a broiler until golden, watching carefully. Pour soup into bowls and serve accompanied by cheese bread.
