- 8 Veal cutlets (each 80 grams)
- 120 grams Cheese sliced (such as Emmentaler, Gruyère and raclette cheese)
- 4 slices cooked ham
- salt
- freshly ground peppers
- 3 Tbsps Pastry flour
- 2 eggs
- 150 grams breadcrumbs
- clarified butter (to fry)
Preparation steps
1.
Rinse veal, pat dry and flatten. Cut cheese and ham into slices and place cheese and ham on each piece of veal.

Fold veal over ham and cheese, press the edges together and season with salt and pepper. Coat each veal piece with flour. Beat eggs in a shallow bowl and cover veal pieces in egg.

Then cover veal pieces with breadcrumbs. Heat clarified butter in a pan and fry veal for 3-4 minutes on each side until golden brown. Drain briefly on paper towel and serve.
