4 thin Turkey cutlets (about 120 grams)

2 Tbsps Pastry flour
1 egg
1 Tbsp milk
4 Tbsps breadcrumbs
40 grams clarified butter
2 sprigs frill parsley

Preparation steps

Rinse the turkey cutlets, pat dry and tap gently. Season with some salt and pepper. Cut the blue cheese into thin slices.

To prepare the cordon bleus, top each turkey cutlet with one ham slice and one blue cheese slice. Roll up the turkey cutlets and fix, such as with toothpicks. Season the rolls on outside with salt and pepper, and coat with flour. Beat the egg with the milk, and dip the rolls in it. Finally, coat the rolls in the breadcrumbs and press gently.

Heat clarified butter in a large skillet and fry the cordon bleus until golden brown for about 5 minutes over medium heat on both sides. Occasionally baste with the clarified butter.

Pluck the parsley and place the fried cordon bleus over it. Serve in a plate with cranberries.
