2 Cauliflower (prepared into florets)
2 lemons
2 Tbsps Avocado oil
½ clove garlic cloves (crushed)
Chives (snipped)

Preparation steps

1.
Cook the cauliflower in a large saucepan of salted, boiling water for 4 - 5 minutes until tender to the point of a knife.

Drain well and refresh immediately in iced water.
3.
Pare the zest from the lemons and julienne with a sharp knife. Halve and juice the lemons into a bowl and add the avocado oil, garlic, and seasoning, whisking well.
4.
Drain the cauliflower, pay dry, and season generously. Toss in the lemon dressing and spoon into dishes.
5.
Top with a garnish of chives and lemon zest before serving. Season with salt and pepper.
