200 grams Basmati rice
salt
200 grams green Peas
150 grams Corn (canned)
4 eggs
2 garlic cloves
2 centimeters fresh ginger
2 Tbsps vegetable oil
2 Tbsps yellow Curry powder
3 Tbsps roasted slivered almonds
2 Tbsps freshly chopped cilantro
1 Tbsp lemon juice
freshly ground peppers

Preparation steps

1.

Boil rice in 400 grams (approximately 1 ounce) of salted water. Thaw peas and drain corn through a sieve.

2.

Boil eggs for 8-10 minutes in hot water. Drain, shock in ice water, peel and quarter. 

3.

Peel and mince garlic and ginger. Heat oil in a pan and cook garlic and ginger. Add peas, corn and curry powder and sauté briefly.

4.

Add cooked rice and flaked almonds to the mixture and stir. 

5.

Stir in cilantro and season with lemon juice, salt and pepper. Serve with eggs.
