1 Ciabatta (Italian White bread)
150 grams Roquefort cheese
6 Tbsps Mayonnaise
salt
freshly ground peppers
1 Avocado
2 Tbsps lemon juice
4 Tomatoes
balsamic vinegar (for drizzling)
olive oil (for drizzling)
scallions

Preparation steps

1.

Cut cheese into thin slices.

2.

Warm ciabatta bread (do not toast) under a preheated oven broiler, watching carefully. 

3.

Rinse tomatoes, cut into eighths, remove seeds, cut into slices and season with salt and pepper. Sprinkle tomato slices with a few drops of balsamic vinegar and olive oil.

4.

Cut avocado in half, remove pits and loosen avocado flesh from peel. Cut avocado into small cubes and season with salt, pepper and a little lemon juice.

5.

Cut ciabatta bread into 4 thick slices and cut each of these in half crosswise.

6.

Spread 1 1/2-2 tablespoons of mayonnaise on the lower half of each ciabatta slice, sprinkle with chives and cover with tomato and avocado. Place cheese slices on top and cover with remaining ciabatta slices. Serve immediately.
