1 cup turkey breasts (diced)
½ cup vegetable stock
4 Lettuce (torn into bite-sized pieces)
1 carrot (peeled and grated)
4 Tbsps canned Sweet corn
2 scallions (cut into rings)
½ yellow pepper (finely sliced)
lemon juice
ground White pepper (finely sliced)
1 beefsteak Tomato (peeled and diced)
4 Tbsps Mayonnaise
4 tsps finely grated Gouda

Preparation steps

1.
Cook the turkey in the vegetable stock for 4-5 minutes. Drain.
2.
Place the lettuce at the bottom of 4 glasses then add the grated carrot, turkey, sweetcorn, spring onions and pepper. Season each layer with salt, lemon juice and ground white pepper as desired.
3.
Finish off with the diced tomatoes, add 1-2 tbsp mayonnaise and top with the cheese.
