60 grams Dark chocolate
2 Tbsps cocoa powder
125 grams Pastry flour
50 grams ground almonds
175 grams sugar
½ tsp cinnamon
1 pinch Ground clove
1 generous pinch ground allspice
3 egg yolks (beaten)
150 grams cold butter (cubed)
1 beaten egg white (for brushing)

Preparation steps

Rinse the oranges, pat dry and finely grate the peel. Finely chop the chocolate. Sift the cocoa powder and flour into a large bowl. Add the chopped chocolate, 100 g (approximately 1/2 cup) of sugar, half of the orange zest, and the spices. Mix well. Make a well in the center of the flour mixture and add the egg yolks. Sprinkle the cubed butter over everything and mix together with a pastry cutter or two forks, then quickly knead with hands to form a smooth dough. Divide the dough into two rolls about 4 cm (approximately 1.5 inches) in diameter. Wrap tightly with plastic wrap and refrigerate for 1-2 hours.

Preheat the oven to 190°C (approximately 375°F). Line two baking sheets with parchment paper.

Mix remaining sugar with the remaining orange zest for decorating. Remove the dough rolls from the refrigerator and roll each in the beaten egg white, then sprinkle liberally with the orange sugar. Cut the rolls into thin slices, about 5 mm (approximately 1/4 inch) thick, and place on the prepared baking sheet. Bake for 10-12 minutes and cool on a wire rack.
