Even smarter

Butter is a purely natural product and for centuries has contained only the same ingredient, namely cow's milk. That's why it scores points, just like milk with calcium for healthy bones and teeth.

You can refine the short pastry biscuits with spices of your choice. How about vanilla, cinnamon or orange peel, for example? You can also be creative when decorating the cookies. A chocolate icing, for example, is just as suitable.


For the dough
300 grams Pastry flour
200 grams butter
100 grams sugar
1 egg
1 generous pinch Lemon peel
Pastry flour (for dusting)
For decoration
1 egg white
1 Tbsp lemon juice
250 grams powdered sugar

Preparation steps


Sift the flour on a work surface. Make a well in the center and add the pieces of cold butter with the sugar, egg and lemon zest. Knead until the dough is smooth and no longer sticks to the hands. Wrap with plastic wrap and chill about 30 minutes.


Preheat the oven to 180°C (approximately 350°F) convection. Line a baking sheet with parchment paper.


Place the dough on a floured surface and roll out to about 3 mm (approximately 1/8 inch) thickness and cut out star and boot shapes as desired. Place on the baking sheet and bake 10-12 minutes until golden brown. Remove from the pan and let cool.


To decorate, beat the egg white with 1 teaspoon lemon juice until stiff. Sprinkle in the powdered sugar and beat until glossy. Brush the cookies with some of the icing and spoon some into a piping bag. Let the icing dry slightly and pipe dots with the remaining icing. Let dry before serving.
